Another Sunday Potluck is upon us after a small hiatus for the holidays. Ben’s theme this week is TexMex, which is fantastic because the options are endless. Or at least they would be if I didn’t have bowling league all afternoon prior to potluck. Because of this I’ve decided to cook a recipe I can carry with me to bowling (and then to Ben’s) and not have to worry about spoilage.
This pineapple salsa recipe I found in my trusty Moosewood Cookbook. I was a little skeptical at first since the recipe doesn’t contain onions, but the cumin and garlic do enough heavy lifting to add some savory flavor to the sweet pineapple and mint. I really enjoyed the few samples I had of this recipe, and am confident it will be a hit at any gathering. Also per Mollie Katzen’s suggestion, this recipe also pairs well as a relish with chicken and fish entrées.
Pineapple Salsa – 1 Knife (Adapted from the Moosewood Cookbook by Mollie Katzen)
Ingredients:
- 1 20 oz. can of crushed pineapple (or a little over 2 cups if you want to chop fresh pineapple)
- 5-7 sprigs of mint (to yield 2-3 tablespoons minced)
- 2 gloves of garlic
- 1 lime
- ¼ teaspoon salt
- ¼ teaspoon cumin
- cayenne pepper to taste (optional)
- tortilla chips
Cook:
- Add the pineapple to a large bowl.
- Squeeze the juice from one lime into the bowl. I like to use a fork to help extract as much juice as possible from the lime. It also sometimes helps to roll the lime on a counter top or cutting board before cutting and juicing to get more juice from the fruit.
- Remove the peel from the garlic cloves, mince, and then add to the bowl. You can also use a garlic press if you have one.
- Remove the mint leaves from the twigs and chop into a fine mince. To do this gather the leaves closely together and chop them finely. Often times you want to gather and chop the leaves a few times. You can also use a food processor or similar chopper to mince the mint.
- Add the mint to the bowl and stir all of the ingredients until well mixed.
- Add salt, cumin and cayenne to the bowl and stir well to incorporate.
- Serve with tortilla chips and enjoy!
